For the first option, you can do this by entering all email addresses, 
separated by command, in the “Email Address(es)” field of the 
account. You can compose the string in a text editor and then copy and 
paste into the “Email Address(es)” field of the account.

For the second option, you could set the “Email Address(es)” field 
of the account to something invalid (e.g., "FILL_IN at 1.2.3.4". Then, if 
you forget to fill it in, the message won't get sent.

For the third option, MailMate does this to some extent, but I don't 
understand fully what it does. If you start a new composition window and 
then start typing a recipient, MailMate often/sometimes changes the 
'From:' field to the last 'From:' address used for that recipient. I 
don't understand exactly when it does versus doesn't do this.
