Yes, look in the manual, "Hidden preferences" and the "Composing 
section", there you find some instructions (look for: defaults write 
com.freron.MailMate MmReplyWroteString -string 'On %e %b %Y, at %k:%M, 
${from.name:${from.address}} wrote:')
