There are three ways this can work (for any application):

1. The application uses the sharing system in macOS (the little box with 
an upwards arrow).
2. The application explicitly supports MailMate using AppleScript.
3. The application has some kind of plugin system which allows the user 
to do add it.

I don't know how QuickBooks works.

Note that the sharing extension did not work well in the most recent 
release of MailMate (at least on High Sierra). Hold down ⌥ when 
clicking “Check Now” in the Software Update preferences pane to 
fetch a fixed test release.
