The differences are currently very subtle. Here I've switched to the 
“Classic” look which makes the quoted text above blue. The new 
standard (default) look has a gray-scale look. The `code` styles are 
also a bit different now.

If the styling does not survive sending then make sure a “styling 
method” is enabled in the preferences (“Inlining” or 
“Stylesheet”).

But let me know if you create a super-cool extraordinary theme I can 
offer as an option :)
