I'm not sure. You can provide log files if you like and I'll see if I
can spot something:
* Open the Activity Viewer (⌥⌘0).
* Wait until you have seen both types of behavior.
* Use “Help ▸ Send Server Logs” (remove the IMAP logs if you
like).
Note that the logs can contain small segments of the content of your
sent emails (I should either change this or add some kind of 1-way
distortion).
