Have you thought of that "~" is your home folder, which is expanded to 
"/Users/<username>"? The path names are then (under the assumption that 
your user name is blair):

	/Users/blaire/Library/Application Support/MailMate/
	/Users/blaire/Library/Preferences/com.freron.MailMate.plist
