I believe this is something Benny broke somewhere around r5900 with a
rework of message rendering. There's a "Show headers" command in the
Format menu but it is always dimmed.
There's a file at
/Applications/MailMate.app/Contents//Resources/Layouts/headersFormatting.plist
which seems to control the reading pane headers, but the details of its
use and grammar are not documented. You MAY be able to override that
with a file of the same name in ~/Library/Application
Support/MailMate/Resources/Layouts/ but that is only true if that
original .plist is still used and is overridable. Some years ago I tried
using that and never quite figured out the right incantations.
