When you receive a message to a “Hide my e-mail” address the original From: is rewritten and substituted by an address from the apple service. If you reply to the mail, you’ll reply to this substituted address which will cause the service to rewrite your reply and send it to the original address WITH your hide-my-e-mail address in the From :)

There is no need for MailMate to do anything here.
