 From what I understand of Mermaid, it uses JavaScript. MailMate (like 
almost every MUA) wisely has no support for running JavaScript in email 
and never should. You probably just need to create the diagram manually 
and embed the graphic.

There's no bundle for it. I would not expect such a bundle to be 
possible, but maybe I'm missing something.

(I have never used Fantastical, so I don't have any answer to your 
question about that.)
