Credentials live in the macOS Keychain, so you may need to restore an old version of that (~/Library/Keychains/login.keychain usually.)

Everything else lives in ~Library/Application Support/MailMate/. There is account-specific configuration in all of these:

~Library/Application Support/MailMate/Identities.plist
~Library/Application Support/MailMate/Mailboxes.plist
~Library/Application Support/MailMate/Sources.plist
~Library/Application Support/MailMate/Submission.plist
~Library/Application Support/MailMate/Tags.plist
