I also have a 2020 MacBook Pro with M1 (apple silicon) and cannot get encryption to work there because I cannot install the GPG Suite. If GPG runs under Big Sur on my (intel based) iMac, should it not also run on my M1 based MacBook Pro?

I had the same issue, and although I'm not affiliated with GPGTools etc. I installed the nightly (unsupported) build from https://nightly.gpgtools.org and now I can sign and encrypt on my M1 Air.
