For the record, MailMate does have several blind users, but I've never 
claimed MailMate to be particularly good for blind users although the 
plain text aspect does help.

The license key is saved in the login keychain (it can be seen in the 
Keychain Access app). Depending on user settings this means it might 
even be saved in the iCloud Keychain which should make it pretty safe 
from being deleted.
