<p dir="auto">If you understand CSS, you can look at them and see. Each of those corresponds to one of the mmTheme files in /Applications/MailMate.app//Contents/SharedSupport/Bundles/MailMate.mmbundle/Themes/, which are CSS inside an old-style Text PList wrapper.</p>
<p dir="auto">There is probably somewhere in ~Library/Application Support/MailMate/ that you can add your own and/or override Benny's, but I'm not sure where.</p>
