The <code style="background-color:#F7F7F7; border-radius:3px; margin:0; padding:0 0.4em" bgcolor="#F7F7F7">Format</code> menu has a <code style="background-color:#F7F7F7; border-radius:3px; margin:0; padding:0 0.4em" bgcolor="#F7F7F7">Show Markup</code> command with a default keyboard shortcut of <code style="background-color:#F7F7F7; border-radius:3px; margin:0; padding:0 0.4em" bgcolor="#F7F7F7">⌃⌘M</code>. Hit that and then use arrow keys (or typing) to select <code style="background-color:#F7F7F7; border-radius:3px; margin:0; padding:0 0.4em" bgcolor="#F7F7F7">Plain Text</code> or <code style="background-color:#F7F7F7; border-radius:3px; margin:0; padding:0 0.4em" bgcolor="#F7F7F7">Markdown</code> and hit return. I assume (but haven’t tried) that the keyboard shortcut can be changed as normal in the keyboard system preference.</p>
<p dir="auto">There are complimentary commands in that menu that are useful for showing the headers, signatures, and identities pop-up menus, too. I find the Identities one particularly useful. You can also combine this with assigning a shortcut to an identity in System Preferences. For example: if you use System Preferences to assign a shortcut of <code style="background-color:#F7F7F7; border-radius:3px; margin:0; padding:0 0.4em" bgcolor="#F7F7F7">⌃P</code> to your primary identity, you can then hit <code style="background-color:#F7F7F7; border-radius:3px; margin:0; padding:0 0.4em" bgcolor="#F7F7F7">⌃⌘I</code> to open the identities pop-up menu, followed by <code style="background-color:#F7F7F7; border-radius:3px; margin:0; padding:0 0.4em" bgcolor="#F7F7F7">⌃P</code> to select the primary identity.</p>
